Anushree Priyadarshini (PhD, MBA, MSc.)

Director of the research group Eco-LOGIC (Economics for Healthy Societies and Green Sustainable Communities), Dr Anu Priyadarshini is an Assistant Professor in Management in the School of Business, Maynooth University (MU), Ireland. She has over 12 years of experience in teaching, research, and industry, focusing on Circular Bioeconomy for Agri-food Systems, Environmental, Economic, and Social Sustainability Assessment, as well as Business Management and Entrepreneurship. Her interdisciplinary research strongly aligns with the UNSDGs specially focusing on Responsible Consumption and Production (SDG 12), Climate Action (SDG 13) and Good Health and Well-Being (SDG 3).

Anu supervises a team of researchers, including PhDs, MPhils, Postdoctoral Researchers and Research Assistants. Her research employs consumer & business understanding approaches, costing strategies and Life cycle assessment (LCA) techniques for environmental, food and healthcare challenges. Anu is Co-ordinator/PI/Co-PI and partner on over 10 EU and nationally-funded sustainability research projects and publishes her work as peer-reviewed journal (Q1, Q2, ABS) articles, book chapters and teaching cases. Her research has featured on RTE, in The Sunday Times and has been covered by National Radio.

She had been a research consultant to a Harvard Innovation Lab start-up and is regularly engaged in EU grant review panels, PhD examining, journal editing, reviewing, guest lecturing and presenting her research in scientific conferences as keynote and invited talks. Organising summer schools, workshops and interactive citizen sessions, Anu is engaged in disseminating her work to academia, industry and policy makers.

Daniel T. Burke (PhD, MSc, MBS, BSc)

Postdoctoral researcher on the CircBioCityWaste Project, researching the sustainable and resource-efficient valorisation of urban waste streams through Life Cycle Assessment and PESTEL analysis. 

Daniel earned his PhD at Technological University Dublin through the Health, Environmental, and Economic Impact of Diets in Ireland (HEED) Project. His research mapped dietary patterns and food consumption behaviours in the Republic of Ireland, assessed their environmental and health impacts, and proposed the “New Irish” Diet (Aiste Bia Nua-Éireann) as a pathway toward a more sustainable Irish food system. He also holds a BSc in Chemical Biology, an MBS in Business & Global Agriculture, and an MSc in Climate Change, Agriculture, and Food Security.

He has extensive industry experience working in Japan at Sustainable Lab Inc. and Denka Co., Ltd., where he served as an ESG & SDG Analyst and International Business Consultant, and is fluent in Japanese.

Vaishali Thaore (PhD)

Process system engineering expert in process modelling and simulation. Experienced in implementing advanced engineering techniques to design a cost-effective and energy-efficient strategy. I have experience in techno-economic assessment and Life Cycle analysis for designing process models for the sustainable production of biochemicals and biopharmaceuticals. Hydrogen supply chain analysis. Skilled in the development of mathematical process models using process simulation software gPROMS, MATALB, ASPEN Plus, and SuperPro. Mathematical programming in Python.

Courage Yaw Krah

Fourth-year PhD student researching postharvest physical and metabolic food loss/waste (FORWARD Project). Courage's research work focuses on sustainability challenges in food systems, particularly food loss and waste across the post-harvest chain and in households. He has some  academic and professional experiences in Ghana and Indonesia. His research interests include post-harvest food loss assessment, consumer food waste management, life cycle assessment (LCA), and sustainable consumption within the circular economy. Courage has designed and implemented national surveys and food waste diaries, applied advanced quantitative methods, and conducted LCAs to evaluate environmental impacts. He has published in peer-reviewed journals, presented at international conferences, and actively shared his findings in seminars.

Shwe Yie Lin 

Doctoral student working on the RefineTEXT Project, investigating the sustainable and resource-efficient valorisation of textile streams in Ireland using Life Cycle Assessment and PESTEL analysis at the School of Business, Maynooth University. She holds a B.Eng. in River and Coastal Engineering and an M.Eng. in Environmental and Water Resources Engineering. She has conducted research on life cycle environmental sustainability assessment of sustainable agri-food systems and circular economy models.

Rakesh Rayapureddi

Research Assistant with the EcoLOGIC Research Group at Maynooth University’s School of Business, where he contributes to the Duck-FEED project, advancing sustainable protein systems through circular bioeconomy innovations. He holds a Postgraduate Diploma in Agri-Food Innovation & Sustainability from UCD and a Master’s by Research in Aerospace & Mechanical Engineering from SETU Carlow.

Rakesh is the founder of a climate-smart agri-tech startup and inventor of multiple patents in sustainable harvesting and horticulture pest detection systems. As a participant in Enterprise Ireland’s New Frontiers and Teagasc’s FAST-IP programmes, he has developed strong expertise in research commercialization, IP strategy, and stakeholder-driven innovation.

MPhil Candidate researching Societal Health Impacts of Climate Change in the Republic of Ireland under the CRISIS Project.
