Anushree Priyadarshini (PhD, MBA, MSc.)
Director of the research group Eco-LOGIC (Economics for Healthy Societies and Green Sustainable Communities), Dr Anu Priyadarshini is an Assistant Professor in Management in the School of Business, Maynooth University (MU), Ireland. She has over 12 years of experience in teaching, research, and industry, focusing on Circular Bioeconomy for Agri-food Systems, Environmental, Economic, and Social Sustainability Assessment, as well as Business Management and Entrepreneurship. Her interdisciplinary research strongly aligns with the UNSDGs specially focusing on Responsible Consumption and Production (SDG 12), Climate Action (SDG 13) and Good Health and Well-Being (SDG 3).
Anu supervises a team of researchers, including PhDs, MPhils, Postdoctoral Researchers and Research Assistants. Her research employs consumer & business understanding approaches, costing strategies and Life cycle assessment (LCA) techniques for environmental, food and healthcare challenges. Anu is Co-ordinator/PI/Co-PI and partner on over 10 EU and nationally-funded sustainability research projects and publishes her work as peer-reviewed journal (Q1, Q2, ABS) articles, book chapters and teaching cases. Her research has featured on RTE, in The Sunday Times and has been covered by National Radio.
She had been a research consultant to a Harvard Innovation Lab start-up and is regularly engaged in EU grant review panels, PhD examining, journal editing, reviewing, guest lecturing and presenting her research in scientific conferences as keynote and invited talks. Organising summer schools, workshops and interactive citizen sessions, Anu is engaged in disseminating her work to academia, industry and policy makers.

Postdoctoral researcher on the CircBioCityWaste Project, researching the sustainable and resource-efficient valorisation of urban waste streams through Life Cycle Assessment and PESTEL analysis.
Daniel earned his PhD at Technological University Dublin through the Health, Environmental, and Economic Impact of Diets in Ireland (HEED) Project. His research mapped dietary patterns and food consumption behaviours in the Republic of Ireland, assessed their environmental and health impacts, and proposed the “New Irish” Diet (Aiste Bia Nua-Éireann) as a pathway toward a more sustainable Irish food system. He also holds a BSc in Chemical Biology, an MBS in Business & Global Agriculture, and an MSc in Climate Change, Agriculture, and Food Security.
He has extensive industry experience working in Japan at Sustainable Lab Inc. and Denka Co., Ltd., where he served as an ESG & SDG Analyst and International Business Consultant, and is fluent in Japanese.

Courage Yaw Krah
Fourth-year PhD student researching postharvest physical and metabolic food loss/waste (FORWARD Project). Courage's research work focuses on sustainability challenges in food systems, particularly food loss and waste across the post-harvest chain and in households. He has some academic and professional experiences in Ghana and Indonesia. His research interests include post-harvest food loss assessment, consumer food waste management, life cycle assessment (LCA), and sustainable consumption within the circular economy. Courage has designed and implemented national surveys and food waste diaries, applied advanced quantitative methods, and conducted LCAs to evaluate environmental impacts. He has published in peer-reviewed journals, presented at international conferences, and actively shared his findings in seminars.
